Fried Chicken Tenders with Rice and Gravy





Well this was amazing. I don't eat fried yumminess all the time and actually I can't even remember the last time we made this for dinner, but my husband was wanting it so I "let" him make it. ;)


Fried Chicken Tenders


~9 Chicken Tenders, thawed
1 cup Flour
1 tsp Salt
1 tsp Pepper


If you'll want rice with the meal, start it first. I use a rice cooker and I love brown rice with this meal but white rice is fine if you prefer.


Heat oil in pan on medium-high heat.  Mix flour, salt and pepper in a zip bag. Add chicken and coat well.  Drop a little flour into the oil and if it sizzles, it's probably hot enough. Carefully add chicken to pan.  After a few minutes, check a piece of chicken to see if it's turning brown, and if it is, turn the other pieces to brown on the other side. The key here is to turn the chicken as little as possible. More turns means more chance the breading will separate from the chicken.




When done, drain on paper towels.



For gravy, drain most of the oil, leaving just a little bit and dump the remaining flour into the pan.


Stir it into the oil and drippings, scraping up all of the goodness from cooking the chicken.


Add some milk. This part isn't measured, so start with less than you think you'll need and add more to thin it out as needed.


Stir well. I recommend using a slotted spatula for this part as it helps bring the gravy together. Stir and cook until it thickens and gets nice and bubbly.


The rice should be done by now. :) 



Serve!
