Roasted Root Vegetables


This is one of those dishes I love to make when it's chilly outside. It's so delicious and warm and filling, and goes great with some Crock Pot Chicken.


Preheat oven to 400*. Prepare a large baking pan - I like to use the Large Bar Pan from Pampered Chef.

Gather your veggies! You can do any/all that you like. This batch has:

Sweet Onion
Carrots
White Potatoes
Purple Sweet Potatoes
Rutabaga

Quarter the big veggies (onions, potatoes) and chop the carrots into pieces a few inches long.

Toss veggies with olive oil, salt and pepper.  Pour onto baking pan and bake for about 45 minutes, stirring a time or two during cooking.
