Muffins (make 'em as healthy as you like)

This recipe is adapted from a friend. You can put just about any fruit or veggie in them.  I've grated zucchini and carrots in it, used strawberries, blueberries, etc.  


Muffins (make 'em as healthy as you like)


1/3 cup butter, melted
1 egg beaten 

1/2 cup Sugar or Agave, or just a few drops of Liquid Stevia
1.5 cup Whole Wheat Pastry Flour (or any combo of white/wheat)

3/4 cup Flax Meal
1 tsp Baking Powder 
1 tsp Baking Soda
1/2 tsp Salt
2-3 Bananas, very ripe (if they are large 2 is ok, but 3 is better if they aren't)
2 Apples, peeled and diced
Mix-ins like Blueberries, Cranberries, Chocolate Chips, etc. as desired
Milk, optional



Preheat oven to 350*.  Prepare muffin tin with paper cups or spray with nonstick cooking spray.  Mix butter, egg and sweetener with electric mixer until combined.  Add dry ingredients; blend well.  Mix in fruit and whatever else you're adding.  Add milk a tablespoon at a time if needed to moisten if needed.  Spoon into prepared muffin tin and bake 20-25 minutes until they start to brown and spring back when you touch them.
